Another Week of Dinners

Here’s what we ate last week:

Monday – Chef Salad of mixed greens, purple curly kale, roasted Romanesco, steamed beets, chickpeas, leftover roasted butternut squash, avocado, and pumpkin seeds, drizzled with tofu ranch dressing. Served with whole wheat sourdough bread from Farmstead Bread and sliced cantaloupe.

Tuesday – Leftover Lentil Meatballs in marinara sauce with spaghetti, big green salad with balsamic, fresh pineapple and cantaloupe.

WednesdayChickpea Biryani (brown rice, chickpeas, onions, raisins, cashews, spices) with leftover roasted Romanesco. Cantaloupe on the side.

Thursday – Black bean taquitos made with beans I cooked last week, quick brown rice (I like to keep this boxed rice on hand for when I’m short on time and out of cooked rice), homemade guacamole, and salsa. More cantaloupe.

Friday – Cauliflower-Butternut Bisque. I made this up as I went along by dry-sauteeing sliced leeks that needed to be used up, adding cauliflower and veggie broth (Better Than Bouillon), simmering until tender, then tossing in the last of the roasted butternut squash, some cashew milk, and pureeing with my immersion blender until smooth. Garnished the bowls with a few drops of Cholula sauce. Served the soup with tuna sandwiches on whole wheat sourdough. Yes, I eat fish (and even beef) once in a while! This is the canned albacore you can buy at the Umpqua Valley Farmers Market from the guy (Fishing Vessel Roma) who caught it right over at Charleston.

Saturday – Date Night! We went to Carlo’s in Winston and had the Black Bean Enchiladas de Mole that are topped with avocado and pico de gallo and come with a big pile of perfectly steamed broccoli, cauliflower, and carrots on the side.

Sunday – Dinner was a repeat of the Chef Salad we had on Monday. Gotta get those greens in:)

There you have it. Another week of simple, predominately plant-based dinners.

Note: almost all of the veggies were purchased at the Umpqua Valley Farmers Market from Norm Lehne Garden and Orchards or Valadez Organic Produce. They have fresh vegetables all winter long!
